These naturally sweetened wonders come together quickly and are incredibly satisfying. They are gluten, dairy, refined sugar and egg free (but not plant-based because of the gelatin). Tigernuts are not actually nuts at all, but small tubers that are nutty in taste and hearty in texture. They are very high in fiber, and a good source of iron. The flour can be found online (Pamela’s and Gemini are my favorite). These cookies are best eaten day of if you want the crispy edges and chewy centers, but they keep for about 1 week in an airtight container (they’ll get soft but are still delicious!)
